Plant milk is becoming more and more represented in the diet, not only to those who eat raw or vegan foods but also to all others who want a healthier alternative to the milk of an animal origin. Those milks are made from various nuts, seeds and cereals: almonds, hazelnuts, Indian walnuts, hemp, oats, coconut… The process is simple and almost the same for all of these ingredients.

Almond milk ingredients:

  • 100g of almonds (untreated and unsalted)
  • Sweetener at will (honey, maple syrup, agave syrup or 4-5 dates)
  •  1-1.5 liters of water

The almonds should stay in water for at least 6 hours or overnight to get softer and grow, and release their enzyme inhibitors, making them easier to digest. Water should be changed several times to be fresh, and it should not need to be consumed.

Then peel them (this takes 30 minutes, so plan accordingly if you want the milk to be ready at a certain time). Place the peeled almonds together with the sweetener in a blender and add 300ml of water. Blend until you get the same creamy mixture. Then add the rest of the water and blend a few more minutes … and the milk is prepared – enjoy it!

Almond milk can be placed in a refrigerator, in a glass bottle or a jar, for approximately 3 days.
